How To Make Gluten Free Vanilla Coconut Pound Cake- Video Demo

Gluten Free Vanilla Coconut Pound Cake

  • 1cup Bob’s Red Mill Gluten Free All Purpose Flour
  • 1/4 cup Bob’s Red Mill Organic Coconut Flour
  • 1/4 tsp Brown Rice Flour
  • 2 teaspoon Baking Powder
  • 1/4 tsp Salt
  • 1/2 cup Sugar
  • 1/3 cup coconut oil
  • 2Eggs
  • 1 tsp Vanilla Extract
  • 12 oz Vanilla Yogurt
  • Splash of Coconut Flakes
  1. Preheat oven to 350
  2. Spray 9x5inch loaf pan with nonstick spray
  3. Sift together flours, baking powder and salt
  4. Set aside
  5. Cream sugar and coconut oil until well blended
  6. Add eggs and vanilla and mix until incorporated
  7. Add dry ingredients to sugar mixture, alternating with yogurt, mix well until combined
  8. Pour into prepared pan
  9. Smooth top
  10. Bake until lightly golden, and toothpick inserted comes out clean- 40-50 minutes
  11. Cool completely before slicing
  12. Toss Coconut Flakes on top

I added the coconut on top as an afterthought (to make it prettier too) but next time I would try baking some of the coconut inside.
